Ingredients

  1. 4 slices bread (whole grain, sourdough, or your choice)
  2. 1 ripe avocado
  3. 2 cups fresh spinach leaves
  4. 1 cup mushrooms (button, cremini, or portobello), sliced
  5. 1 tablespoon olive oil or butter
  6. 2 garlic cloves, minced
  7. 1 tablespoon lemon juice
  8. Salt and black pepper, to taste
  9. Red pepper flakes (optional, for garnish)

Instructions

Toast bread slices until golden and crisp.

  1. In a skillet, heat olive oil or butter over medium heat. Add mushrooms and cook for about 6 minutes until golden brown and tender.
  2. Stir in garlic and spinach, cooking 1–2 minutes until spinach is wilted. Season with salt and pepper.
  3. Mash avocado in a bowl with lemon juice, salt, and pepper.
  4. Spread mashed avocado over toasted bread.
  5. Top with spinach and mushroom mixture.
  6. Garnish with red pepper flakes or extra lemon juice, if desired. Serve immediately.
