2 cups cooked chicken breast, shredded or diced
2 ripe avocados, peeled and diced
1/4 cup red onion, finely diced
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
2 tablespoons fresh cilantro or parsley, chopped
1 tablespoon lime juice
Salt and pepper to taste
Optional: 1/4 cup crumbled feta cheese for added flavor
In a large bowl, mash one of the avocados with lime juice until mostly smooth.
Add the diced chicken, red onion, cucumber, cherry tomatoes, cilantro, and the second diced avocado.
Gently stir to combine, being careful not to over-mash the avocado pieces.
Season with salt and pepper to taste.
