Ingredients
4 cups fresh arugula
1 ball burrata cheese (about 8 oz)
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon balsamic glaze (optional)
Salt, to taste
Black pepper, to taste
Instructions
Wash and dry the arugula, and place in a large salad bowl.
Halve the cherry tomatoes and add to the bowl.
Tear the burrata cheese into pieces and arrange on top of the salad.
Drizzle with olive oil and lemon juice.
Season with salt and black pepper to taste.
Optional: drizzle with balsamic glaze for added sweetness and depth.
Serve immediately.
