A homemade take on the iconic Arby’s Beef ‘n Cheddar sandwich, featuring thinly sliced roast beef, creamy cheddar cheese sauce, and zesty red ranch sauce on a soft onion bun.

Ingredients

  • 1/2 lb deli-style roast beef, thinly sliced
  • 2 onion sandwich buns (or kaiser rolls)
  • 1/2 cup cheddar cheese sauce (store-bought or homemade)
  • Butter, optional (for toasting buns)
  • 23 tbsp red ranch sauce (homemade or store-bought)
  • For Homemade Red Ranch Sauce:
  • 2 tbsp ketchup
  • 2 tbsp French dressing
  • 1 tsp apple cider vinegar
  • 1 tsp sugar
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika

Instructions

  1. In a small bowl, mix together all red ranch sauce ingredients. Stir until smooth and refrigerate until needed.
  2. Heat roast beef slices in a skillet or microwave with a splash of water or beef broth until warmed through.
  3. Warm the cheddar cheese sauce in a saucepan or microwave until smooth and pourable.
  4. Optional: Lightly butter the onion buns and toast them in a skillet or oven until golden brown.
  5. Spread red ranch sauce on the bottom bun, layer with warm roast beef, drizzle with cheese sauce, and top with the other bun.
  6. Serve hot and enjoy immediately.

Notes

  • Use rare or medium deli roast beef for best texture.
  • Cheese sauce can be made from scratch with a simple roux, milk, and cheddar.
  • Make the red ranch sauce ahead of time for deeper flavor.
