Apple Pie Enchiladas are a creative dessert mash-up that wraps sweet apple filling in flour tortillas, bakes them in a buttery cinnamon sauce, and delivers all the cozy flavors of apple pie in a fun, easy-to-make format.

Ingredients

  1. 6 flour tortillas (8-inch size)
  2. 1 (21 oz) can apple pie filling or 2 1/2 cups homemade apple filling
  3. 1/2 cup unsalted butter
  4. 1/4 cup brown sugar
  5. 1/4 cup white sugar
  6. 1 tsp ground cinnamon
  7. 1/4 tsp ground nutmeg (optional)
  8. 1 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  1. Spoon about 1/4 to 1/3 cup of apple pie filling down the center of each tortilla and roll tightly. Place seam-side down in the baking dish.
  2. In a saucepan over medium heat, melt butter. Stir in brown sugar, white sugar, cinnamon, nutmeg (if using), and vanilla extract. Cook for 2–3 minutes, stirring until smooth and slightly thickened.
  3. Pour the warm cinnamon sauce evenly over the rolled tortillas.
  4. Bake uncovered for 20–25 minutes, or until golden and bubbling.
  5. Allow to cool slightly before serving. Serve warm with ice cream or whipped cream if desired.

  • Warm tortillas briefly in the microwave to make rolling easier.
  • Add chopped nuts like pecans or walnuts for added texture.
  • Try caramel sauce in place of the cinnamon sauce for a richer version.
