Apple Peanut Protein Muffins are soft, wholesome, and protein-packed treats made with fresh apples, natural peanut butter, and a boost of protein powder. Perfect for breakfast, post-workout fuel, or healthy snacks on the go, they’re naturally sweetened and full of nutty, apple-cinnamon goodness.

Ingredients

  • 2 cups rolled oats (or oat flour)
  • 1/2 cup protein powder (vanilla or unflavored)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup natural peanut butter
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 cup chopped apple (peeled if desired)
  • 1/2 cup milk (dairy or non-dairy)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease lightly.
  2. In a large bowl, combine oats or oat flour, protein powder, baking powder, cinnamon, and salt. Stir well.
  3. In another bowl, whisk together eggs, peanut butter, applesauce, honey, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined. Fold in chopped apples.
  5. Divide batter evenly among muffin cups, filling each about 3/4 full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
