Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup boiling water
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups apples, peeled and chopped (Granny Smith or Honeycrisp)
  • Optional: ½ cup chopped walnuts or pecans
  • Optional toppings: cinnamon sugar, caramel drizzle, or powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
  2. Combine oats and boiling water in a bowl. Let sit for 10–15 minutes to soften.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  5. Add eggs and vanilla, mixing until smooth.
  6. Stir in the soaked oats until fully incorporated.
  7. Gradually add the dry ingredients, stirring until combined.
  8. Fold in chopped apples and nuts if using.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool slightly before serving. Dust with powdered sugar or drizzle with caramel, if desired.
