Apple Eclair Cake is a no-bake layered dessert featuring graham crackers, creamy vanilla filling, and warm cinnamon apples, all chilled until soft and sliceable. It’s easy, cozy, and perfect for fall or holiday gatherings.

Ingredients

  • Graham crackers (about 1–2 sleeves)
  • 2 cups chopped apples (peeled)
  • 2 tbsp butter
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 (3.4 oz) box vanilla instant pudding mix
  • 2 cups cold milk
  • 1 (8 oz) package cream cheese (softened)
  • 1 (8 oz) tub whipped topping (like Cool Whip)
  • Optional glaze: 1/2 cup powdered sugar + 1–2 tbsp milk + 1/4 tsp vanilla

Instructions

  1. In a saucepan over medium heat, melt butter. Add apples, brown sugar, and cinnamon. Cook 8–10 minutes until soft. Stir in vanilla and let cool.
  2. In a bowl, whisk together pudding mix and cold milk until thickened.
  3. In a separate bowl, beat cream cheese until smooth. Fold in pudding mixture, then whipped topping.
  4. In a 9×13-inch dish, layer graham crackers to cover the bottom.
  5. Spread half of the cream mixture over the graham crackers.
  6. Top with half of the cooked apple mixture.
  7. Repeat with another layer of graham crackers, the remaining cream mixture, and the rest of the apples.
  8. Finish with a final layer of graham crackers.
  9. Optional: Whisk glaze ingredients and drizzle over the top.
  10. Cover and refrigerate for at least 6 hours or overnight. Slice and serve chilled.

  • Best made a day ahead to let layers soften and set.
  • Use tart apples like Granny Smith or Honeycrisp for balance.
  • Canned apple pie filling can be substituted in a pinch (about 2 cups).
