Ingredients

  1. 1 cup warm water (110°F/45°C)
    2 teaspoons active dry yeast
    2 tablespoons honey or maple syrup
    1 cup whole wheat flour
    1 cup bread flour
    1/2 cup rolled oats
    1/4 cup sunflower seeds
    2 tablespoons flaxseeds
    1 teaspoon ground cinnamon
    1 teaspoon salt
    1 cup peeled and finely chopped apple (about 1 medium apple)
    2 tablespoons olive oil

Instructions

Activate Yeast: In a bowl, combine warm water, yeast, and honey. Let sit for 5-10 minutes until foamy.

  1. Mix Dry Ingredients: In another bowl, whisk together whole wheat flour, bread flour, oats, sunflower seeds, flaxseeds, cinnamon, and salt.
  2. Combine Wet Ingredients: Add olive oil and chopped apples to the yeast mixture.
  3. Mix and Knead: Add dry ingredients to wet ingredients and stir to combine. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  4. First Rise: Place dough in a greased bowl, cover, and let rise in a warm place until doubled, about 1 to 1.5 hours.
  5. Shape and Second Rise: Punch down dough, shape into a loaf, and place in a greased loaf pan. Cover and let rise for 30-45 minutes.
  6. Bake: Preheat oven to 375°F (190°C). Bake for 35-40 minutes until golden brown and hollow sounding when tapped.
  7. Cool and Serve: Remove from pan and cool on a wire rack before slicing.
