Apple Cider Glazed Chicken with Sweet Potato Mash is a cozy fall-inspired dish featuring juicy chicken glazed in a tangy-sweet apple cider reduction, served over creamy mashed sweet potatoes. It’s elegant enough for guests yet simple enough for weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup apple cider (not vinegar)
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme or rosemary (optional)
  • 2 tablespoons olive oil or butter
  • Salt and pepper, to taste
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
  • 2 pounds sweet potatoes, peeled and cubed
  • 3 tablespoons butter
  • 1/3 cup heavy cream or milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon or nutmeg (optional)
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Place sweet potatoes in a pot, cover with water, and bring to a boil. Cook until fork-tender, 12–15 minutes. Drain and return to the pot.
  2. Add butter, cream, salt, and cinnamon or nutmeg if using. Mash until smooth. Stir in maple syrup if desired. Keep warm.
  3. Season chicken with salt and pepper. In a skillet, heat olive oil or butter over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through (165°F internal temperature). Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds. Add apple cider and Dijon mustard, scraping up browned bits. Stir in herbs if using. Simmer 8–10 minutes until reduced.
  5. If a thicker glaze is desired, stir in cornstarch slurry during the last few minutes of simmering.
  6. Return chicken to the pan and coat with glaze.
  7. Serve sweet potato mash on plates, top with glazed chicken, and drizzle with extra cider reduction. Garnish with fresh herbs if desired.

  • Bone-in chicken works too; adjust cooking time.
