Apple Cider Coffee Cake is a moist, cinnamon-swirled treat infused with apple cider and topped with a buttery streusel crumble. It’s a cozy, spiced cake perfect for fall mornings, brunch, or dessert, pairing wonderfully with coffee or tea.

Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • ¾ cup apple cider
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • For the cinnamon swirl and topping:
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • ¾ cup all-purpose flour
  • ¼ cup cold butter, cubed
  • Optional glaze:
  • ½ cup powdered sugar
  • 12 tbsp apple cider or milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Mix in sour cream and apple cider until smooth.
  6. Gradually add dry ingredients, mixing until just combined.
  7. In a small bowl, combine brown sugar and cinnamon for the swirl.
  8. Spread half of the batter into the prepared pan and sprinkle with half of the cinnamon-sugar mixture.
  9. Add the remaining batter and top with the rest of the cinnamon sugar.
  10. For the crumble topping, mix flour, brown sugar, and cold butter with a fork until crumbly, then sprinkle over the top.
  11. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  12. Cool for 20 minutes. Drizzle with optional glaze made from powdered sugar, apple cider, and vanilla.

  • For stronger apple flavor, reduce apple cider by half before using.
  • Add chopped apples or nuts for extra texture.
