Ingredients

1 lb chicken tenders or chicken breasts, cut into strips
1 cup almond flour or finely ground almonds
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
2 tablespoons olive oil or avocado oil (for frying)

Instructions

  1. In a shallow bowl, combine the almond flour, garlic powder, onion powder, paprika, oregano, salt, and black pepper. Mix well.
  2. Dip each chicken strip into the beaten eggs, ensuring it’s fully coated. Then, dredge the chicken in the almond flour mixture, pressing gently to adhere the coating.
  3. Heat the olive oil or avocado oil in a large skillet over medium heat. Once the oil is hot, add the chicken tenders in a single layer, being careful not to overcrowd the pan. Cook in batches if necessary.
  4. Cook the chicken for 4-5 minutes per side, or until golden brown and cooked through, with an internal temperature of 165°F. Adjust the heat as needed to avoid burning the coating.
  5. Once cooked, transfer the chicken tenders to a plate lined with paper towels to drain any excess oil. Serve with your favorite dipping sauces such as honey mustard, ranch, or ketchup.
