Alice Springs Chicken is a restaurant-style dish made with juicy chicken breasts smothered in tangy honey mustard sauce, sautéed mushrooms, crispy bacon, and melted cheese. A savory, indulgent meal that’s easy to make at home.

Ingredients

  1. 4 boneless, skinless chicken breasts
  2. Salt and black pepper, to taste
  3. 2 tbsp olive oil or butter (for searing or grilling)
  4. 1/4 cup Dijon mustard
  5. 3 tbsp honey
  6. 2 tbsp mayonnaise
  7. 1 tsp lemon juice (optional)
  8. 1 cup sliced mushrooms
  9. 4 slices cooked bacon, crumbled or in strips
  10. 1 cup shredded Colby Jack or cheddar cheese
  11. Fresh parsley, chopped (optional garnish)

Instructions

In a small bowl, mix Dijon mustard, honey, mayonnaise, and lemon juice until smooth. Set aside.

  1. Pat chicken breasts dry and season with salt and black pepper.
  2. Cook chicken: either grill over medium-high heat 6–8 minutes per side, or sear in a skillet with oil until golden and fully cooked. Remove and set aside.
  3. Sauté mushrooms in the same pan with butter or oil until tender and browned.
  4. Place cooked chicken on a baking sheet. Brush with honey mustard sauce, then top with mushrooms, bacon, and shredded cheese.
  5. Broil 2–3 minutes or bake at 400°F for 5–7 minutes until cheese is melted and bubbly.
  6. Garnish with parsley and serve hot with sides of choice.

Notes

  1. Double the honey mustard sauce to serve extra on the side.
  2. Skip mushrooms if preferred, or replace with onions or peppers.
  3. Substitute boneless chicken thighs for a juicier variation.
