Air Fryer Zucchini Fries are a healthier, crispy take on a classic comfort food, with a golden exterior and tender interior. Perfect as a side dish, snack, or appetizer, these fries are easy to make and full of flavor without the guilt.

Ingredients

  1. 2 medium zucchinis
    1/2 cup breadcrumbs (panko or regular)
    1/4 cup grated Parmesan cheese
    1 tsp garlic powder
    1 tsp dried oregano
    1/2 tsp onion powder
    Salt and pepper, to taste
    1 egg, beaten
    1 tbsp olive oil (optional for extra crispiness)
    Marinara sauce or ranch dressing for dipping (optional)

Instructions

Wash the zucchinis, cut off the ends, and slice them into fries, about 1/2 inch thick.

  1. In one bowl, whisk the egg. In another, combine breadcrumbs, Parmesan, garlic powder, oregano, onion powder, salt, and pepper.
  2. Dip each zucchini fry into the beaten egg, then coat with the breadcrumb mixture.
  3. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  4. Arrange the zucchini fries in a single layer in the air fryer basket. Spray with olive oil for extra crispiness, if desired. Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
  5. Serve with marinara or ranch dressing for dipping, if desired.

Notes

  1. For extra crispiness, lightly spray the breaded fries with olive oil before air frying.
  2. Can be made gluten-free by using gluten-free breadcrumbs or almond flour.
  3. For a cheesy variation, add extra grated mozzarella or cheddar to the breadcrumb mixture.
  4. If you prefer, bake the fries at 425°F (220°C) for 20-25 minutes, flipping halfway through.
  5. Leftover fries can be reheated in the air fryer at 350°F (175°C) for 3-5 minutes to regain crispiness.
