4 medium russet potatoes
2 tablespoons olive oil
Salt and pepper to taste
1 cup shredded cheddar cheese
¼ cup sour cream (for serving)
2 tablespoons chopped green onions (optional)
Preheat your air fryer to 400°F (200°C).
Wash and scrub the potatoes thoroughly. Pierce them with a fork a few times.
Microwave the potatoes on high for 5-6 minutes or until they are tender but not fully cooked.
Once the potatoes are cool enough to handle, slice them in half lengthwise. Scoop out the insides, leaving about a ¼-inch border around the edges.
Brush the potato skins with olive oil and season with salt and pepper.
Place the potato skins in the air fryer basket, skin side down, and cook for 10-12 minutes, or until golden and crispy.
Return the stuffed skins to the air fryer and cook for an additional 3-4 minutes, or until the cheese is melted and bubbly.
Serve with sour cream and garnish with green onions, if desired.
Store leftover potato skins in an airtight container in the refrigerator for up to 3 days.
To reheat, air fry at 350°F (175°C) for 3-5 minutes, or microwave for 1-2 minutes.
