Air Fryer Chicken Fajitas are a quick, flavorful, and easy-to-make Tex-Mex dish that brings the vibrant flavors of tender chicken, bell peppers, and onions together in the air fryer. Perfect for busy weeknights or casual dinners, this one-pan meal is packed with savory seasoning and can be customized with your favorite toppings. Ingredients

2 boneless, skinless chicken breasts

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 tablespoons olive oil

1 tablespoon fajita seasoning (store-bought or homemade)

Salt and pepper to taste

8 small flour tortillas (or corn for gluten-free)

Optional toppings: sour cream, guacamole, shredded cheese, salsa, fresh cilantro

Instructions

  1. Preheat the air fryer: Set your air fryer to 400°F (200°C) and preheat for 5 minutes.

  2. Prepare the chicken and veggies: Slice the chicken breasts into thin strips. In a large bowl, toss the chicken, bell peppers, and onion with olive oil, fajita seasoning, salt, and pepper.

  3. Cook the fajitas: Place the chicken and veggie mixture in the air fryer basket in a single layer. If necessary, cook in batches to avoid overcrowding. Cook at 400°F for 15-18 minutes, shaking the basket halfway through to ensure even cooking.

  4. Warm the tortillas: While the fajitas cook, warm the tortillas in the microwave for 20-30 seconds or heat in a dry skillet over medium heat for a few seconds on each side.

  5. Serve: Once the chicken is cooked and the veggies are tender, remove from the air fryer. Serve the chicken and veggies in tortillas with your favorite toppings, and enjoy!

Notes

  • Variations: For a spicier kick, add more red pepper flakes or sriracha. Try a vegetarian version by using extra vegetables or tofu instead of chicken. If you prefer a different protein, you can use shrimp,  or beef.

  • Storage/Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes, or on the stovetop in a skillet.

  • Freezing: You can freeze the chicken and veggie mixture for up to 3 months. Thaw overnight in the fridge and reheat in the air fryer or on the stovetop.
