Ingredients

  1. For the Birria Beef:
  2. 1 pound beef (chuck roast or short ribs), cut into chunks
  3. 2 dried guajillo chiles
  4. 2 dried pasilla chiles
  5. 1 dried ancho chile
  6. 1 onion, quartered
  7. 4 cloves garlic, peeled
  8. 2 tomatoes, halved
  9. 1 teaspoon ground cumin
  10. 1 teaspoon ground oregano
  11. 1 teaspoon ground cinnamon
  12. 1 bay leaf
  13. 4 cups beef broth
  14. 1 tablespoon vinegar
  15. For the Fries:
  16. 2 tablespoons olive oil (for the fries)
  17. 1 bag of frozen French fries (about 1 pound)
  18. 1 cup shredded mozzarella cheese
  19. 1 cup shredded cheddar cheese
  20. Fresh cilantro, chopped (optional)
  21. Lime wedges (optional)
  22. Salt and pepper, to taste

Instructions

Make the Birria Beef: In a large pot, add the beef chunks, guajillo, pasilla, and ancho chiles, onion, garlic, tomatoes, cumin, oregano, cinnamon, bay leaf, and beef broth. Bring to a boil, then lower the heat to a simmer. Cook for 2-3 hours until the beef is tender and shreds easily. Skim off any excess fat during the cooking process. Once cooked, remove the beef and shred it with a fork. Save the broth (consommé) for dipping.

  1. Air Fry the Fries: Preheat the air fryer to 400°F (200°C). Lightly toss the frozen fries in olive oil and season with salt and pepper. Cook the fries in the air fryer basket for 15-20 minutes, shaking halfway through, until golden brown and crispy.
  2. Assemble the Birria Fries: Once the fries are done, spread them on a baking sheet or plate. Top with shredded birria beef and both mozzarella and cheddar cheese. Return to the air fryer for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  3. Serve: Drizzle warm birria consommé over the top and garnish with chopped cilantro. Serve with lime wedges and enjoy!

Notes

  1. For extra spice, add jalapeños or chili powder to the beef while cooking.
  2. For a vegetarian option, swap the beef for jackfruit or a plant-based protein.
  3. To make it extra crispy, double-dip the fries in the flour mixture before air frying.
