African Peanut Soup is a rich and comforting dish made with creamy peanut butter, vegetables, warm spices, and flavorful broth. Inspired by West African cuisine, it offers a perfect balance of savory, nutty, and slightly spicy flavors.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium sweet potato, peeled and diced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups vegetable broth or chicken broth
  • 1/2 cup natural peanut butter
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 cups chopped kale or spinach
  • 1 tablespoon fresh lime juice
  • Optional toppings: chopped peanuts, fresh cilantro, cooked rice

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion and cook until softened and translucent.
  3. Stir in garlic and grated ginger and cook for about 1 minute until fragrant.
  4. Add diced sweet potato and cook for 2–3 minutes, stirring occasionally.
  5. Pour in diced tomatoes and broth and bring the mixture to a gentle boil.
  6. Reduce heat and simmer for 15–20 minutes until the sweet potatoes are tender.
  7. Stir in peanut butter until fully dissolved and the soup becomes creamy.
  8. Add cumin, paprika, cayenne pepper, salt, and black pepper. Stir well.
  9. Add kale or spinach and cook for a few minutes until wilted.
  10. Finish with fresh lime juice and stir.
  11. Serve hot with optional toppings like chopped peanuts, cilantro, or cooked rice.

Notes

  • Use natural, unsweetened peanut butter for the best flavor.
  • For a smoother soup, blend part of the soup with an immersion blender.
  • Add chickpeas, lentils, chicken, or tofu for additional protein.
