This 20-Minute Red Beans & Rice is a quick, satisfying, and flavorful dish inspired by classic Creole flavors. Packed with protein, fiber, and hearty goodness, it’s perfect for busy weeknights or a comforting dinner.

Ingredients

  1. 1 can (15 oz) red kidney beans, drained and rinsed
    1 cup long-grain white rice
    1 tablespoon olive oil
    1 onion, chopped
    1 bell pepper, chopped
    2 cloves garlic, minced
    1 teaspoon smoked paprika
    1 teaspoon dried thyme
    1/2 teaspoon cumin
    1/4 teaspoon cayenne pepper (optional, for heat)
    1/4 cup chicken broth or vegetable broth
    1 tablespoon soy sauce (or tamari for gluten-free)
    Salt and pepper, to taste
    1 green onion, chopped (for garnish)
    Hot sauce (optional, for garnish)

Instructions

Cook the rice according to package instructions. Typically, this will take about 15-20 minutes.

  1. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sautéing for 3-4 minutes until softened.
  2. Add the minced garlic, smoked paprika, thyme, cumin, and cayenne (if using). Stir for about 1 minute, allowing the spices to become fragrant.
  3. Add the drained red kidney beans and chicken broth to the skillet. Stir everything together and bring it to a simmer. Let it cook for 5-6 minutes, allowing the flavors to meld together. If the mixture looks too dry, add a little more broth.
  4. Stir in the soy sauce and season with salt and pepper to taste.
  5. Serve the beans mixture over the cooked rice and garnish with chopped green onions. Add a dash of hot sauce, if desired.
